Curried Quinoa with Chicken and Peas Recipe

So here we have it.  The curried chicken quinoa with peas recipe…that I will be making 3 times a week, just for Tyler.

Well, maybe not that often…but it’s certainly one I will be adding to our regular rotation!

There is so much flavor in this recipe, despite it’s simplicity. This is what I love about One Dish Dinners!

Saute the chicken pieces, chopped onion and crushed garlic in a Dutch Oven.

Spicify.

Stir in the canned tomatoes.

Add water.

Quinoa.

Voila. (Minus the peas.)

(Those get mixed in at the end.)

Curried Chicken Quinoa with Peas

Ingredients

  • 1 Tbsp olive oil
  • About 1 1/2 lb. boneless skinless chicken thighs, cut into bite size pieces
  • 1 small red onion, chopped
  • 2 garlic cloves, crushed
  • 1 15 oz. can petite diced tomatoes
  • 1 Tbsp curry powder
  • 1/2 Tbsp chili powder
  • 1 tsp nutmeg
  • 2 cups water or chicken broth
  • 1 cup quinoa
  • 1 12 oz. bag frozen peas
  • Salt and pepper to taste

 

Directions

  • Add the oil, chicken pieces, chopped onion and garlic to a Dutch oven.  Saute for about 10 minutes, or until chicken pieces are mostly cooked.
  • Add the diced tomatoes, undrained, curry powder, chili powder and nutmeg.  Stir until combined and let cook for about 5 minutes.
  • Stir in the water and bring to a bubble.  Stir in the quinoa, bring to rolling boil and then reduce heat to medium low, cover and cook for 20 minutes.  With about 5 minutes left to cook, stir in the frozen peas.
  • Turn heat to low and keep warm until ready to serve.
  • Makes 4 adult portions.

Loaded Potato Frittata Recipe

If you are coming over from the 20 Meals from Costco for $150, welcome to my One Dish Dinners site. This recipe is part of Plan #2 and can be made as is, or without the bacon. If you already have bacon on hand, feel free to use. If not, it’s easy to omit. The packages of turkey bacon or regular bacon are very large at Costco and not worth purchasing for just 1 meal. Perhaps in a future “breakfast edition”…we will include more bacon recipes 🙂

Frittatas.

They make a great breakfast. They make a great lunch. And they make a wonderful one dish dinner!

You’ve got the protein from the eggs, cheese and bacon, plus a little starch from the potatoes.  Serve it with a side of fresh fruit and you’ve got the entire food pyramid covered!

Loaded Potato Frittata

Ingredients

6 slices turkey bacon (optional)
4 medium Russet potatoes
8 eggs
1/2 cup milk
1/4 cup sour cream
Salt and pepper
1 1/2 cup shredded cheddar cheese
1 bunch green onions, sliced

Side ideas: Clementine oranges, apple slices, bananas, cantaloupe wedges

 

Directions

  • Preheat oven to 350.
  • (Optional: Cook the turkey bacon (or regular bacon if you prefer) in the cast iron skillet.)
  • Remove the bacon from the skillet and then saute the potatoes in the bacon grease for 5 to 7 minutes, or until begin to soften. If you don’t make bacon, the cook the potatoes with 2 Tbsp olive or vegetable oil.
  • In a mixing bowl, whisk together the eggs, milk and sour cream.  Add a little salt and pepper and whisk that in too.
  • Once the potatoes have softened some, pour the egg mixture over top and let cook on the stovetop for about 3 minutes, or until you see the eggs along the edges begin to set.
  • Transfer the skillet to the preheated oven and bake for 15 to 20 minutes, or until the eggs in the middle have set.
  • Add the shredded cheese to the top and then bake for another 5 minutes.  Be sure to use a heavy duty oven mitt, as the handle will be hot, hot, hot!
  • Once the cheese is melted, remove the skillet from the oven.  Let cool slightly before slicing.
  • Slice and serve topped with green onion slices and a side of fresh fruit.

Homemade Bread Crumbs in Minutes – One Dish Dinner Tips and Tricks

If you need bread crumbs but only have fresh bread on hand, here’s what you can do.

Version A

If you have very few minutes to spare in getting your bread crumbs ready, this is the method for you!

Toast…

…to golden brown perfection.

Then take the 2 pieces and rub them together.  Quickly rub them.  And then flip them over and rub more.  And when you get down to the parts that are not toasted, then rub, rub, rub.  There will be some larger pieces and some crust that will fall off.  Pull those out and rub. Until they get to be as fine as you can get them.

Season.  For every 2 bread slices, add 1 Tbsp Italian seasoning, 1 tsp salt and a few dashes of pepper.

Now…they won’t be perfectly crumb-y, but that doesn’t matter if you are mixing them into meatballs or meatloaf.  Their purpose is to soak up juices and give some bounce to the meatballs and meatloaf…and the clumpier bread crumbs will work just fine.

But if you’re going to use them as a topping for Mac n Cheese, then you might want to try version B.  At least the “run them through the food processor” part!

Version B

Use this method if you have a few minutes to get the bread crumbs ready. Place 2 pieces of bread on a baking sheet for 15 minutes in a 300 degree oven. Pulse the now dried out bread in a blender or food processor.

Season (as discussed above) and add to the recipe.

Unused homemade bread crumbs can be stored in a plastic baggie in the freezer.

Makes about 1 1/2 – 2 cups of bread crumbs.

Southwest Macaroni and Cheese

Spice up your favorite comfort food!

This is a creamy, creamy and delicious version of mac n cheese with a little zip and zest mixed in!  Balance the zip and zest with some black beans and corn and you’ve got the perfect one dish dinner!

Southwest Macaroni and Cheese

Ingredients

1 lb. elbow macaroni noodles
8 oz. sour cream
10 oz. Rotel diced tomatoes with green chilies
2 cups cooked black beans, or 15 oz. can black beans
15 oz. can corn
2 cups Mexican blend cheese, or Pepper Jack cheese blend, divided

 

Directions

  • Cook the pasta noodles as directed.  Drain.
  • In the same pot, stir together the sour cream, Rotel diced tomatoes, black beans, corn.  Add the noodles back to the mixture and stir in about 1 1/2 cups of the shredded cheese.
  • Use the remaining cheese to top off each serving. Serve warm.
